Apple cake

This is just amazing! I love apple cakes, and it's quite a Norwegian tradition to make a lot of these when the apple trees are full of ripe and delicious apples. I was a bit afraid that I would never again feel the taste of a juice apple cake when I went vegan. Well, the sorrows are over, try this one:


RECIPE

7,5 dl flour
3 dl sugar
2 tsp vanilla sugar or 1 tsp vanilla extract
1,5 tsp salt
1 tsp cinnamon, or more if you love cinnamon
2 dl oil

2 dl soy milk
3 tsp vinegar

2 tbsp corn starch
1,5 dl water

Sugar and cinnamon for sprinkling over the cake
4-6 apples in slices

Whisk together soymilk and vinegar and let it stand for 5-10 minutes. Do the same with corn starch and water.
Put the dry ingredients in a bowl. Whisk in the soymilk and vinegar, oil and the corn starch and water-mix.
Stir it all together until smooth, and pour it into a big, round cake pan (about 26 cm), the bottom covered with wax paper.
Place the slices apples on top of the cake and sprinkle cinnamon and sugar all over the cake.

Set the oven to 350 F and bake the cake for 90 minutes. If it gets to brown on the top, cover it with wax paper the last 20-30 minutes.

Let it cool in the pan, and then serve it with vegan ice cream or vanilla sauce.
