Chocolate upside down pudding cake

"Is it a cake? Is it pudding? It's just good"!

This recipe is from one of my favorite cookbooks "How it all vegan". It's both pudding and cake. It's delicious, even if it maybe doesn't look that way. Don't let the looks fool you! This cake has actually built-in chocolate sauce. Oh, Lord!


RECIPE
115 grams flour
1 tbsp baking powder
25 grams cocoa powder
1/4 tsp salt
90 grams sugar
115 grams melted vegan butter
125 ml soy milk
1 tsp vanilla sugar

Sauce
150 grams sugar
25 grams cocoa powder
475 ml boiling water

Set the oven to 350 F.

Mix the dry ingredients in a bowl. Add soy milk and butter and stir. Don't stir too much.
Pour the batter into a cake pan (I use an oven proof glass bowl).
Mix together sugar and cocoa for the sauce. Sprinkle all of it over the cake batter and - here comes the weird part - pour all of the boiling water over the cake. Don't stir! It will do it's own thing in the oven.

Let it bake for 40 minutes. While baking, little "islands" will pop up and in the end the cake will get a nice crust all over the top. It's quite fascinating to watch the process in the oven.





Serve the puddingcake with ice cream or whipped vegan cream or vegan vanilla sauce.
