Red lentil soup

This soup is thick and delicious. I especially enjoy it on cold winters days.


RECIPE
1 large chopped onion
3 cloves of garlic, shredded
1 stick of cellery, sliced
3 large carrots, shredded or in small pieces
300 grams red lentils, raw
1 cab of peeled, chopped tomatoes
2cubes of vegetable broth
3 dl water
Spices of you choice. I use cumin, salt, pepper, chiliflakes, nutmeg and parley

Fry the vegetables a bit, don't burn them. Add water, lentils, tomatoes, spices and the vegetable broth - cubes. Let it simmer for a while, and add more water if needed. Let the soup simmer for about half an hour, and be careful that it does not bboil dry, since the lentils get bigger when they are cooked. You probably have to add 2-3 dl water.

Serve smoking hot in deep bowls, maybe with some delicious No Knead Focaccias.
